This project investigates the stories of four young women who have decided to train as butchers and learn the art of deboning – a profession usually associated with men. In the past it hasn't always been like that, though. Traditionally, women butchers have always existed in Tuscany. This series is about empowerment, with several levels of interpretation: the strength and self confidence of these women enable them to become butchers as well as anything else they choose to be.
